- 3 chicken tenderloins
- 3 tbls ETA BBQ Sauce
- 20ml ETA Sal-fry Oil
- sea salt
- cracked pepper
- 10ml ETA Skill-Fry Oil

- Method - Marinade the chicken tenderloins with ETA BBQ Sauce, ETA Sal-fry Oil, sea salt and cracked pepper. Lightly grease pan with ETA Skill-Fry Oil and seal chicken on both sides until brown and cooked. For the dressing, puree gooseberries, mango and white vinegar. When pureed, add ETA Sal-fry Oil, salt and pepper to dressing. Toss all salad ingredients together with dressing. Garnish with water cress.
