Steamed Sticky Rice

- 400 ml light coconut milk
- 125 ml light thickened cream
- 1 cup white sticky rice
- 4 teaspoons Equal Spoon for Spoon
- 4 bananas
- 30 g Equal Spoon for Spoon
- 4 sliced strawberries
- Banana leaves and mint for garnish

- Method - Bring the coconut milk and cream to the boil. Add the sticky rice and the Equal Spoon for Spoon and simmer for about 25 minutes.
Peel and halve the bananas. Place them onto a baking tray and sprinkle with Equal Spoon for Spoon. Bake in a pre-heated oven at 220°C for 8 to 10 minutes or until golden brown.
- To Assemble - Line a deep bowl with banana leaves and place the rice in the centre. Top with the baked bananas. Garnish with sliced strawberries and fresh mint.
