Butter Chicken Wontons

- 1 chicken thigh
- 1/2 bunch coriander
- 1 clove garlic
- small piece of ginger
- 3 tbsp Butter Chicken Paste
- 1 packet wonton wrappers
- egg wash (2 eggs & 150 ml milk, whisk to blend)
- 2 large bananas (just ripe)
- sweet mango chutney
- ETA Cottonseed oil for frying

- Method - Finely chop the chicken, coriander, garlic and ginger. Mix in the butter chicken paste. Place one teaspoon of the chicken mix into the centre of the wonton wrapper. Egg wash the sides and fold over to make a triangle. Shape the fold in and pinch the middle. Deep fry the wontons in ETA Cottonseed oil until golden brown.
Slice the banana into thick rounds, place into egg wash and bread crumb. Deep fry until golden brown.
- To Assemble - Place wontons and banana onto a platter and accompany with sweet mango chutney on the side.
