Copperpot Basil, Cashew and Parmesan on roasted mushroom, garlic and buffalo mozzarella pizza

- 500g Copperpot Basil, Cashew and Parmesan Dip
- 10 Pizza bases (35 cm)
- 800g Pizza sauce, tomato based
- 800g Mushrooms (sliced or quartered)
- 200g Garlic cloves, peeled and halved
- 100ml Oil
- Freshly ground pepper and sea salt flakes to taste
- 1.2kg Buffalo mozzarella (tear in to odd shaped pieces)
- 100ml Olive oil
- 1 bunch Fresh basil leafs, washed

- Heat oil in a fry pan, sauté mushrooms and garlic season and place in a hot oven until slightly roasted, than set aside.
- Spread pizza sauce on to the pizza bases.
- Top pizza with mushrooms, garlic, mozzarella, season and bake in hot oven until baked.
- Top with Copperpot Basil, Cashew and Parmesan, drizzle with olive oil and sprinkle with basil.

Suggestions for serving and garnishing:
- Add red chillies to the mushrooms and garlic.
- Try using wild mushrooms.
