Ingredient Preparation & Service
  • 500g Copperpot Basil, Cashew and Parmesan Dip
  • 10 Pizza bases (35 cm)
  • 800g Pizza sauce, tomato based
  • 800g Mushrooms (sliced or quartered)
  • 200g Garlic cloves, peeled and halved
  • 100ml Oil
  • Freshly ground pepper and sea salt flakes to taste
  • 1.2kg Buffalo mozzarella (tear in to odd shaped pieces)
  • 100ml Olive oil
  • 1 bunch Fresh basil leafs, washed
  • Heat oil in a fry pan, sauté mushrooms and garlic season and place in a hot oven until slightly roasted, than set aside.
  • Spread pizza sauce on to the pizza bases.
  • Top pizza with mushrooms, garlic, mozzarella, season and bake in hot oven until baked.
  • Top with Copperpot Basil, Cashew and Parmesan, drizzle with olive oil and sprinkle with basil.

Suggestions for serving and garnishing:

  • Add red chillies to the mushrooms and garlic.
  • Try using wild mushrooms.
