During my early days, I travelled to Europe and was based in the UK county of Shropshire for 10 years, where I gained a Michelin listing whilst head chef at the Hadley Park House Hotel. While I love my job, outside of work I am also a passionate mountain biker and find this a great stress release from work, although my body does not always agree.

What was/is your biggest challenge in the kitchen?
Whilst working in the UK, we were doubling the size of the hotel and function capacity. At this time we had taken Christmas bookings and deposits but due to unforeseen planning issues, all we had in December was a slab. So, we had to set up a marquee and outdoor kitchen and serve thousands of customers throughout the coldest December on record - -6 during the day and down -20 at night. That was a big challenge.
