|300||mL||Praise Balsamic Dressing|
|2.5||kg||Potatoes (Kipfler), skin on washed|
|80||g||Whole Garlic cloves -crushed|
|10||g||Fresh thyme, leaves picked|
|2||g||Salt and pepper|
For the potatoes, use any firm, waxy potato. Kipfler are particularly good for this. Give them a good scrub before cutting them in half length ways depending and par boil them in salted water for around 15 minutes then drain and set aside.
In a large bowl combine potatoes, Praise Balsamic Dressing, Olive Oil, garlic, thyme and season.
Place into a roasting pan and roast in the oven on 200° C for around 20 – 30 minutes tossing and turning occasionally until potatoes are well cooked, golden and crunchy.
