Bircher Muesli with Almond Milk

This bircher muesli recipe can be made in bulk and last two days in the fridge, making it the perfect breakfast dish for the daily service rush.
Makes 10, scale as needed.

Ingredients

100 g White Wings Toasted Muesli
200 g Cranberries
50 g Honey
120 g Sunflower Seeds
1.2 L Almond Milk
120 g Greek Yoghurt
50 g Strawberries
20 g Blueberries
20 g Pepita Seeds
40 g Coconut (Shredded)

Step 1

Mix the White Wings Rolled Oats, cranberries, half of the coconut, honey, and sunflower seeds together. Stir thoroughly to ensure it is well combined, then refrigerate overnight.

Step 2

Select the appropriate plating for your style of business. If you are a cafe, you can serve the bircher muesli in a deep bowl or for a catering business you can use individual glass jars.

Step 3

Once you have selected your plating option, top the bircher with a dollop of yoghurt. Slice the strawberries in half and place them on top along with the blueberries, remaining coconut, sunflower seeds and pepita seeds. To provide the dish with some crunch, sprinkle the White Wings Toasted Muesli over-the-top. Then, it is ready to serve.

I really enjoy making this overnight bircher muesli recipe because I can alter it depending on events. If I am catering for a large function, I will portion the bircher into individual glass jars, whereas if I was catering for a more intimate event, I will choose a large shallow bowl. The options are endless.
