|3.2||kg||Cooked barbeque or roast chicken (1.6 kg raw weight), skin and bone removed, torn into bite size pieces|
|200||g||Red and green capsicum, washed and diced|
|200||g||Celery, washed peeled and diced|
|300||g||Red onion, peeled and diced|
|750||g||Cherry tomatoes, cut into halves|
|1||g||Salt and pepper|
Place the picked chicken, corn, capsicum, celery and red onion into a bowl. Add Praise Whole Egg Mayonnaise, season and mix well.
Garnish with cherry tomatoes and chives.
For a vegetarian option chicken can be substituted with chickpeas, kidney or cannellini beans.
