Mix together the pesto and Praise Classic Mayonnaise. Set aside.
Heat a grill plate over high heat. Spray vegetables with a little olive oil spray. Cook until tender and slightly charred. Set aside.
Cut ciabatta in half and spread both sides with pesto mayonnaise mix. Top with baby spinach, grilled vegetables and bocconcini. Return to oven, warm until bocconcini starts to melt then serve.
