These Seared Canadian Scallops are great to serve as a canapé for a function, or as a larger serving for a main.
Makes 10, scale as needed.

Ingredients

60 each Canadian scallops (6 per serve)
100 mL Crisco Canola Oil
1.5 kg ETA Mayonnaise
250 g Chipotle chilies in adobo sauce

Method

Raw Inredients

Step 1

Mix or blend mayonaise and chipotle chillies together.

Chiptole Mayonnaise

Step 2

Sear scollops and season with salt and pepper.

Lightly SearedProperly Seared

Step 3

Dress plate with Chipotle mayonnaise and place scollops on mayonnaise.
