Place the Sugar, PILOT Shortening, White Wings Flour, Baking Powder, Milk Powder, Salt and Mixed Spice into a bowl and blend thoroughly on a low gear, but not to paste.
Blend the Egg, Water and, if using, Vanilla Essence together, then add two thirds of the mix to the mixture from Step 1 and bring to a paste. Add the remaining egg and water mix and blend all on a low gear.
Chop Apples, scrape bowl, then aerate on third gear for four minutes.
Bake for 40 minutes at 185°C
