Rich and garlicky, this vegetarian panini is packed full of earthy goodness. Served warm and toasty, it’s perfect for lunch or as a light dinner.
Grilled Vegetable, Spinach and Bocconcini Ciabatta Roll

Ingredients

Serves:
  • 15 g Pesto
  • 40 g Praise Classic Mayonnaise
  • 50 g Capsicum, Cut into Strips
  • 100 g Eggplant, Sliced
  • 75 g Zucchini, Sliced
  • 30 g Baby Spinach Leaves
  • 40 g Bocconcini, Sliced
  • 0.5 each Artisan White Ciabatta Loaf

Method

Step One

Mix together the pesto and Praise Classic Mayonnaise. Set aside.

Step Two

Heat a grill plate over high heat. Spray vegetables with a little olive oil spray. Cook until tender and slightly charred. Set aside.

Step Three

Cut white artisan ciabatta in half and spread both sides with pesto mayonnaise mix. Top with baby spinach, grilled vegetables and bocconcini. Return to oven, warm until bocconcini starts to melt then serve.
