The go to combination in this simple salad of chicken and corn never fails to be crowd pleaser.
Chicken and Corn Salad

Ingredients

Serves:
  • 450 g Praise Whole Egg Mayonnaise
  • 3.2 kg Cooked barbeque or roast chicken (1.6 kg raw weight), skin and bone removed, torn into bite size pieces
  • 500 g Corn kernels
  • 200 g Red and green capsicum, washed and diced
  • 200 g Celery, washed peeled and diced
  • 300 g Red onion, peeled and diced
  • 750 g Cherry tomatoes, cut into halves
  • 20 g Chives, chopped
  • 1 g Salt and pepper

Method

Step 1

Place the picked chicken, corn, capsicum, celery and red onion into a bowl. Add Praise Whole Egg Mayonnaise, season and mix well.

Step 2

Garnish with cherry tomatoes and chives.

Suggestions for Vegetarian option:

For a vegetarian option chicken can be substituted with chickpeas, kidney or cannellini beans.
